Tofu Coconut Curry

Let’s get into this Tofu Coconut Curry featuring my Bold Gold Curry powder. Fresh spices make all the difference in any dish, so show your spices some love. Spices have been a big part of my wellness journey. They don’t just add flavor, but they’re also nutritionally powerful. Curry is one of my favorite spices and can be made with a variety of spices. Common ones are turmeric, coriander, cumin, fenugreek, and chili pepper. Ginger, black pepper, mustard seeds, curry leaves, and fennel seeds are popular additions too. Here are a few surprising benefits of curry powder:

Many of the benefits of curry are mostly related to individual ingredients such as curcumin (the main compound in turmeric), coriander and cumin to name a few. So show your curry some love with this flavorful and super simple tofu coconut curry .

Makes 4 servings

Tofu Coconut Curry

INGREDIENTS

1 carrot, diced

1 celery stalk, diced

1 medium onion, finely diced

1/2 red bell pepper, seeded and sliced

1 tsp fresh ginger, finely diced

2 garlic cloves, finely diced

1 Tbsp Bold Gold Curry powder

1/2 tsp Sea salt

1 cup mushrooms, your favorite variety

1 tub firm/extra firm tofu, drained well

1/2 cup coconut milk

1/2 cup fresh orange juice

1/4 tsp black pepper

Fresh cilantro (optional)

Tofu Coconut Curry

INSTRUCTIONS 

  1. Heat a medium pan on high heat and have all the ingredients prepared to avoid burning.

  2. Add carrot and celery, sauté for 5 minutes.  

  3. Add onion and bell pepper sauté for 5 minutes.

  4. Add ginger and garlic sauté for a few seconds.

  5. Add the Bold Gold Curry powder and salt. Mix to combine.

  6. Add mushrooms and stir fry for 2 minutes.

  7. Add the tofu and gently fold in, making sure not to break it apart.

  8. Add coconut milk, orange juice and black pepper.

  9. Bring dish to a boil, cover and reduce heat to medium. Cook covered for about 3 minutes.

  10. Add chopped cilantro at the end and serve over rice, if desired.
