Mozzarella, Tomato & Plum Salad

As I move away from from diary, I love discovering vegan options. I used Miyoko's Classic Fresh Italian Style Vegan Mozzarella Cheese for this salad. You can of course use regular mozzarella depending on where you are on your plant-based journey. Make this work for you!

Servings: 6


INGREDIENTS 

  • 4 cups arugula, tightly packed 

  • 3 fresh plums, pitted and sliced 

  • 2 medium heirloom tomatoes, thinly sliced 

  • 8 oz ball of vegan mozzarella, thinly sliced 

  • Salt and pepper or other herbs to taste 

  • Balsamic vinaigrette 

Note: You can also sub peaches or nectarines for the plums. 


DIRECTIONS

Arrange arugula on a platter. 

Alternate plum, tomato, and mozzarella slices over the arugula. 

Drizzle balsamic vinaigrette over salad. 

Season with salt and pepper or other herbs to taste.
